Easy Chicken & Waffles

SHEET PAN – CHICKEN & WAFFLES

MAKES 6 SERVINGS.

1/4 tsp each garlic powder and cayenne pepper

2 tbsp each oil and chopped thyme

4 skinless boneless chicken breasts, cut into thirds

1/2 cup sour cream

Zest of 1 lemon

5 cups cornflakes, crushed

6 tbsp unsalted butter

12 frozen waffles

Maple syrup

Heat oven to 450 degrees. Coat a baking sheet with cooking spray. Toss chicken with sour cream, garlic powder, cayenne, half the zest, salt, and pepper in a bowl. Set aside. *Put cornflakes in a dish, stir in oil, 1 tbs thyme, salt and pepper. Coat chicken in cornflakes mixture. Place on pan, and coat with cooking spray. Bake for 15 min. Mix butter with remaining zest and thyme in a bowl. Season, set aside. *Remove the baking sheet from the oven, and move the chicken to one side. Arrange waffles on the other side of the pan. Bake waffles and chicken for 15 min. Spread lemon thyme butter over waffles. SERVE chicken and waffles with maple syrup
