AMBER'S COUNTY FAIR MUFFINS

Ingredients
1 3/4 c. unsifted all-purpose flour
2 tbsp. sugar
2 1/2 tsp. baking powder
1/2 tsp. salt
1 egg, well beaten
3/4 c. milk
1/3 c. liquid shortening

Preparation
To prepare perfect amber’s county fair muffins, Preheat the oven to 400 degrees. Grease muffin pan. Combine flour, sugar, baking powder and salt in large bowl. Stir well. Combine egg and milk in small bowl, then pour into the dry ingredients. Add shortening. Stir just until moist. (Batter will be lumpy.) Spoon into greased muffin pan, filling each about 2/3 full. Bake until golden brown. (Delicious served warm with jelly or honey!)
