DIABETIC APPLE CAKE
2/3 c. oil
5 tbsp. sugar substitute
1 egg
1 tsp. vanilla
1/2 tsp. salt
1 tsp. baking powder
1/2 tsp. baking soda
1 1/2 c. flour
1/2 c. raisins
1/2 c. water
1 1/2 c. chopped apples
to make diabetic APPLE CAKE, Mix all ingredients. Pour into a lightly greased 9 x 9 inch pan. Sprinkle
with nuts. Bake at 350 degrees for 30 minutes. Makes 16 servings.
You can substitute carrots, bananas and pumpkin for the apples. All
works well, can also be made into cupcakes.
