MAKES 4 SERVINGS.
1/4 cup each breadcrumbs, olive oil, and grated cheese
2 3/4 cups shell pasta
2 tsp basil
1 onion, diced
4 cloves garlic, sliced
2 tbsp tomato paste
15 oz can chickpeas
1 cup chicken broth
Bring a pot of salted water to a boil. Add pasta, and cook until al dente. Drain pasta, and return to pot. Mix breadcrumbs, 2 tbs oil, and 1 tsp basil in a pan, cook 5 min. Season, remove to a bowl. Heat a pan, and add the remaining oil. Add onion, garlic, and remaining basil, and cook for 7 min. Add tomato paste, cook 1 min. Stir in chickpeas and broth, bring to a simmer, and cook for 10 min. *Stir chickpea sauce and cheese into pasta off heat, and season—divide among bowls, and top with breadcrumbs and pepper. ..
