LOW SUGAR DIABETIC CAKE

2 c. golden raisins
2 eggs, beaten
2 tbsp. liquid sweetener, Sweet 10
1 tsp. soda
1 tsp. vanilla
1/2 tsp. nutmeg
1 c. unsweetened applesauce
2 c. water
3/4 c. vegetable oil
1 1/4 tsp. cinnamon
2 c. all-purpose flour

To make LOW SUGAR DIABETIC CAKE, Boil raisins in water until all water is absorbed and then cool. Add
applesauce, eggs, liquid sweetener and vegetable oil. Mix well. Blend
in soda, flour, cinnamon, nutmeg and vanilla. Mix well. Pour into
greased tube pan and bake at 350 degrees for 50 to 60 minutes or
until test done. Serves 20. Each serving equals 1 bread, 1/2 fruit and
1 1/2 fat exchange.
