Breaded Tofu for Kids:
Serves 4
Ingredients:
1 carton extra-firm tofu
¼ cup cornmeal
¼ cup wholemeal flour
¼ cup fine breadcrumbs
Salt and pepper to taste
Instructions:
Drain the tofu from its liquid, but keep it moist. Slice lengthwise into 16 equal size pieces.
In a small bowl, combine flour, cornmeal, breadcrumbs, and season. Place mixture onto a shallow plate and coat both sides of each tofu slice. Pat extra breadcrumb mixture on top on top if needed.
Heat olive oil in a small frying pan. Fry the tofu slices in the oil until golden brown. Turn over and repeat the procedure.
Serve immediately with brown rice and vegetables.
