DIABETIC APPLESAUCE CAKE
1/2 c. water
1/2 c. raisins
1 c. unsweetened applesauce
2 eggs
2 tbsp. liquid sweetener or powder to equal 1 c.
1/2 c. oil
2 c. flour
1 tsp. soda
2 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. vanilla
To make DIABETIC APPLESAUCE CAKE. Preheat oven to 350 degrees. Cook raisins in water until water
evaporates. Add applesauce, eggs, sweetener and oil; mix well.
Blend in soda and flour. Add nutmeg, cinnamon and vanilla. Bake in
greased loaf pan 4 x 8 x 4 inches for 50 minutes at 350 degrees.
Artificially sweetened fruit cocktail may be substituted for raisins to be
more like fruitcake.
