Ingredients for Mau Mau’s Crayfish Etouffee recipe
6 chicken breasts or one whole chicken, cut up into bite size pieces
1 pound of sliced sausage
3 tablespoons of oil
1 cup chopped green pepper
1 cup chopped onion
1 tablespoon chopped or minced garlic
3 teaspoons Worcestershire sauce
1 cup tomato sauce
Salt and Pepper to taste
4 cups of chicken broth
2 1/2 cups uncooked rice
In a large pot, brown the meat in the oil. Remove meat and sauté vegetables until onions
are clear. Add Worcestershire sauce, chicken broth, tomato sauce, seasonings, and
simmer for 15 minutes. Stir in meat and rice. Cover and cook for 30 minutes on medium
heat, stirring occasionally. Then cook 20 more minutes on very low heat without stirring.
