Vegan Chocolate Rice Pudding:
(Serves 4)
Ingredients:
1 cup brown rice (sweet if possible)
1 ½ cups water
2 cups Rice Dream Vanilla
Dash of salt
1 8oz package sugar-free Jello Cook and Serve Chocolate Pudding
¼ cups almonds, slivered
Instructions:
In a pot, bring slightly salted water and rice to a boil. Cover and simmer for about 30 minutes or until all the water has been absorbed. Add Rice Dream Vanilla and mix.
Stir in pudding mix and bring back to a boil. Reduce heat, cover, and gently simmer for another 5 minutes.
Pour into a serving bowl or individual dessert dishes and top with slivered almonds.
