One of my favorites
Irish Baked Potatoes:
Take 2 potatoes per person. Leave the bigger ones to stuff use the little ones, dig out the potatoes into canoes. Peel and boil the centers and the small potatoes in salted water until tender Then drain and mash. Make a mixture with fried bread-crumbs Moisten with 3 beaten eggs, well seasoned with salt and pepper, and 3 tablespoonfuls of milk with the mash. Placing a lump of butter in the potatoes and a layer in the canoes until full. with the mixture place in oven at 350F till toasted brown. Finish under the broiler or salamander. Top with bacon or Sour Cream
Variations cheese veggies cauliflower etc. Goes Great for grilling
