It sounds like a complicated dish, but it’s quite simple. Coat some chicken pieces with flour, salt and pepper and brown in a skillet. Once browned, add chopped onion, minced garlic, sliced red peppers and mushrooms and sauté. When the vegetables are tender, add a ½ cup of chicken stock and can of stewed tomatoes that you have chopped up. Bring to a covered simmer for about 30 minutes. Season with oregano and basil. Serve with your favorite rice or noodles.
