Overnight Farmer's Casserole

We love how simple and delicious the Overnight Farmer’s Casserole recipe is!

Serves: 12
Cooking Time: 1 hour
Ingredients
 6 cups shredded frozen hash browns
 1 ½ shredded Cheddar cheese (or your
preferred cheese)
 2 cups diced ham
 ½ cup diced green onion (optional)
 8 eggs, beaten
 2 (12-ounce) cans evaporated milk
 Salt and pepper, to taste
Instructions
1. Spray or grease a 9 x 13 inch or 3-quart baking dish with nonstick cooking spray. Layer the
bottom of the dish with hash browns. Sprinkle with cheese, ham, and onion.
2. In a mixing bowl, mix eggs, milk, salt, and pepper. Pour egg mixture over potato/cheese/ham
mixture. Cover and refrigerate for 1 hour to overnight.
3. When ready, bake (uncovered) for 50 min to 1 hour or until center is set.
