Good Morning!
Here is a delicious eggplant recipe for you to try today:
Greek Stuffed Egg-Plant
Parboil the eggplant and cut in half. Scrape out some of the insides
Chop small dice: cooked lamb, hamburger, Sausage
2 green peppers,
1 onion,
2 tomatoes
1 garlic clove
Feta
Parsley
1 Egg
1 Tsp Butter
Bread Crums
Sauté 2 minutes. the Onion Garlic and Peppers. Stir in tomato, add some wine, and garlic; cook 3 minutes or until liquid almost evaporates, stirring occasionally. Remove from heat; add feta, 1/4 cup parsley, 1/2 teaspoon salt, and pepper, stirring to combine. add some stock to the bottoms of the halves, In a pan add 1 beaten Egg at 1 Tsp of butter each, mixture into each eggplant shell sprinkle with bread-crumbs
and bits of butter. .Put in a baking dish and bake.
