Italian Roast Beef:
Cut several deep incisions in the upper round of beef and press into them lardoons of salt pork directly into the meat. I like to thinly sliced 2 to 4 cloves of garlic. Then add 1 dozen cloves in the meat; season with salt and pepper.
Then put in the Dutch oven with some hot water in the bottom. Making a rack with carrots and let roast 350F until tender. Temp to 135 F 140F Medium
